Fire cider is a folk tonic built from raw garlic, ginger, and vinegar — a recipe herbalist Rosemary Gladstar began teaching students in 1970s Vermont, simple enough that home herbalists have passed it hand to hand ever since. In 2012 a company trademarked the name and sued three herbalists for using it; after a multi-year fight, the U.S. Patent Office ruled "fire cider" generic in 2014 — a folk name belongs to the folk. Here's our version, and what's actually documented about each ingredient in it.

Ingredients and What They Do
Garlic (Allium sativum)
Garlic's aroma comes from allicin, one of dozens of organosulfur compounds that form the moment a clove is crushed — the enzyme alliinase converts the stable compound alliin into allicin almost instantly. Allicin has documented antibacterial activity against a wide range of bacteria in lab studies. It's also unstable: heat and time break it down within minutes to hours, which is part of why this tonic is blended raw and kept cold rather than cooked.
Lemon
One whole lemon — peel included — supplies a concentrated dose of vitamin C along with the bitter compounds in the pith and rind.
Ginger (gingerol)
Ginger's heat comes from gingerol, the compound responsible for most of its documented effects on nausea and digestion.
Turmeric and Black Pepper (curcumin + piperine)
Turmeric's color and much of its studied activity come from curcumin — but curcumin is poorly absorbed on its own. A pinch of black pepper changes that: piperine, the compound behind pepper's bite, was shown in a widely cited 1998 human study to increase curcumin's bioavailability by up to 2,000%. It's a small addition, but it's doing real work.
Manuka Honey (methylglyoxal)
Manuka honey's antibacterial reputation comes from methylglyoxal (MGO), a compound that accumulates as the honey ages and is the basis of its potency rating (UMF). That's different from most other raw honey, which relies mainly on hydrogen peroxide for antibacterial activity — manuka's is almost entirely non-peroxide; MGO is doing the work here.
Apple Cider Vinegar
Apple cider vinegar has its own documented research: a 2021 study found it increased activity in phagocytes — the immune cells that engulf bacteria — by over 20% against drug-resistant staph and E. coli, in lab-grown human cells. That's cell-culture evidence, not proof of what happens once you drink it, but it's a real, specific finding rather than folklore.
Fire Cider Recipe
Ingredients
- 10 garlic cloves
- 1 whole lemon, quartered
- 1 tbsp turmeric powder
- 1/4 tsp black pepper, freshly ground
- 1/4 cup grated ginger
- 1/4 cup manuka honey
- 3 oz apple cider vinegar
- 1 cup water
Instructions
- Combine the garlic, lemon, turmeric, black pepper, ginger, honey, and vinegar in a blender.
- Blend until smooth.
- Pour into a 16 oz jar and top with water, leaving about half an inch of headspace.
- Store in the fridge. The garlic mellows over the course of about a week as it sits in the vinegar.
- Take a small shot daily.
It's a shot of well-documented plant chemistry — allicin, curcumin paired with piperine, gingerol, MGO, and whatever that vinegar is doing to immune cells in the lab — taken the way herbalists have been taking it for the last fifty years.
